Lebanese Cabbage Salad

Ingredients
  

  • 6 cups green and red cabbage combined cut in small pieces
  • 1/4 of a white onion or 3 scallion strings if you prefer
  • ½ teaspoon salt
  • 1 pint or 10 oz cherry tomatoes
  • 1 garlic clove
  • 3 tbsp extra virgin olive oil
  • 1 lemon
  • cup mint leaves

Instructions
 

  • Cut the cabbage into small stripes and put in a salad bowl
  • Cut all the cherry tomatoes into 4 parts
  • Cut the carrot into small stipes
  • Cut the onion in very small pieces
  • Add all the cut vegetables into the bowl
  • Crush the garlic and add it into a small bowl with the olive oil, the lemon juice and the salt. Mix everything and add to the salad.
  • Cut the fresh mint into small pieces and add to the salad
  • Enjoy!
  • You can serve it right away or put it in the fridge for a few hrs and serve it later.
