Lebanese style Cabbage Salad

Full of Mediterranean flavors, with lemon and mint leaves, this salad is amazingly fresh, healthy, and delicious.

My kids really like this salad, it’s full of flavor, so don’t be scared to offer this to kids, they are going to love it!

Cabbage is one of those vegetables that taste better than it looks and the combination of ingredients in this recipe makes it taste amazing!

This is a Labanese-style Cabbage salad.

Lebanon is a beautiful country located on the eastern shore of the Mediterranean Sea.

This country is famous for its Middle Eastern cuisine, beautiful mosques, and ancient sites.

Cabbage is packed with nutrients, like vitamin C, K, folate, manganese, Vitamin B6, calcium, potassium, and magnesium.

It’s full of antioxidants that help fight inflammation in the body.

It offers lots of fiber that can help improve your digestion, it helps heal peptic and stomach ulcers and it fuels the good bacteria in your gut that protect your immune system, especially when eaten fermented in sauerkraut.

Cabbage is also rich in potassium, which can help lower high blood pressure.

Purple cabbage contains anthocyanins, which can help fight against cancer and heart disease.

You should definitely add cabbage to your meals!

Lebanese Cabbage Salad

Ingredients
  

  • 6 cups green and red cabbage combined cut in small pieces
  • 1/4 of a white onion or 3 scallion strings if you prefer
  • ½ teaspoon salt
  • 1 pint or 10 oz cherry tomatoes
  • 1 garlic clove
  • 3 tbsp extra virgin olive oil
  • 1 lemon
  • cup mint leaves

Instructions
 

  • Cut the cabbage into small stripes and put in a salad bowl
  • Cut all the cherry tomatoes into 4 parts
  • Cut the carrot into small stipes
  • Cut the onion in very small pieces
  • Add all the cut vegetables into the bowl
  • Crush the garlic and add it into a small bowl with the olive oil, the lemon juice and the salt. Mix everything and add to the salad.
  • Cut the fresh mint into small pieces and add to the salad
  • Enjoy!
  • You can serve it right away or put it in the fridge for a few hrs and serve it later.
