Halloween fried pizza

Pizza fritta (fried pizza), called Montanara is a famous Neapolitan, Italian street food. It started to be around after the 2nd worldwide war when there was a lot of poverty around, it is in fact made of very simple ingredients.

It’s soft, it tastes and smells delicious and it’s a kid’s favorite.

I grew up eating it, and whenever my mom would cook it, my siblings and I were super excited.

For our Halloween Party, we wanted to make some food that tasted yummy and looked Halloween-themed at the same time, so we decided to use this recipe and have fun making different Halloween shapes.

My kids really liked this idea and they want me to make them every year.

Fried pizza

This recipe will give you light and airy fried pizzas with a delicious taste.
Servings 18 pieces

Ingredients
  

  • 8 cups flour 1 kg
  • about 2 cups water 500 g There isn't a right amount of water, the dough has to be soft but not sticky, so just add it little by little.
  • 6.5 g dry active yeast
  • 1 tbsp honey
  • 1 an ¼ tbsp extra virgin olive oil
  • 4.5 tsp salt 22 g
  • 25 oz canola oil for frying

Tomato sauce

  • 4 pieces onion ( about 3 inches long) Onions are used to flavor the sauce
  • 1 tbsp extra virgin olive oil
  • 105 oz tomato sauce ( use the one with salt already added in it)

Instructions
 

  • Put the yeast in ⅓ cup of warm water,add the honey and wait for bubbles to form. It should take about 10 min
  • In a bowl mix togeter the flour and the salt
  • Add the water with the yeast and start mixing together
  • Add the water (There isn't a right amount of water, the dough has to be soft but not sticky, so just add it little by little.
  • Add the oil
  • Put some flour on the table or cuttingboard and knead the dough for about 10 min, until the dough becomes nice and smooth
  • Cover the dough and let it rest for 2 to 3 hrs
  • When the dough has doubled in size you can grab some pieces of 90 g each and make a ball
  • Push the inside of the ball pushing with your fingers and try to shape it to a form a circle
  • Use a rolling pin and make the circle bigger (about ⅓ of a inch thick)
  • You can draw a halloween shape and cut it out, when you shape is ready you can put it on top of the dough and cut the dough following the shape
  • Put the frying oil on a pot on medium, when the oilis ready start frying the dough
  • Let it fry for 1 to 2 min and as soon as the border of the dogh start to golden, flip it and fruy the other sde for 1 min

Sauce

  • Put the oil to a low heat and after 2 min add the onion pieces
  • Let the onion pieces saute' for about 2 min
  • add the tomato sauce and cook for about 30 min
  • Inlast 5 min you can add fresh basil leaves or just add the fresh basil leaves on top of the fried bread.
